So, what makes our Italian pizzas authentic?

When it comes to baking the perfect pizza, nothing is left to chance. Fabio goes to great lengths to use only the very best ingredients and authentic baking methods:

  • Napoli-style pizza dough: We create a Napoli-style pizza (and have used the same recipe for 20 years). It’s a highly hydrated pizza dough made from imported Italian Caputo flour, cooked at 450° in an authentic Italian woodfired oven for about 90 seconds. Describe how the hydration helps and why the high temperatures. What is the result? (eg then taste, cispiness, etc) Tell me more.
  • Home-made tomato sauce: Fabio makes all his sources using sand mother Dana peeled tomatoes which have a distinctive sweetness, low acidity and a beautifully concentrated tomato flavour.
  • Imported Italian ingredients: Fabio imports the very best ingredients from Italy, including Caputo flour, extra-virgin olive oil, San Marzano peeled tomatoes, mozzarella and special products such as Provolone Piccante, a spicy Italian cheese imported from Fabio’s home region, Veneto.
